Ingredients

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 4 red bell peppers, chopped
  • 4 cups of vegetable broth
  • 1 teaspoon of cumin
  • 2 teaspoons of chili powder
  • Salt and pepper to taste
    • Directions

      1. Heat the oil in a large pot over medium heat.
      2. Add the garlic and onion and cook until the onion is softened, about 5 minutes.
      3. Add the bell peppers and cook until they are soft, about 5 minutes.
      4. Add the broth, cumin, chili powder, salt, and pepper and bring to a simmer.
      5. Simmer for 15 minutes.
      6. Using an immersion blender, blend the soup until smooth.
      7. Serve warm.
