Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1 cup of green beans, trimmed
  • 1 cup of coconut milk
  • 2 tablespoons of red curry paste
  • 1 tablespoon of soy sauce
  • 1 tablespoon of coconut sugar
  • 1 cup of jasmine rice
  • 1 1/2 cups of water
  • 2 tablespoons of coconut oil
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat 1 tablespoon of coconut oil over medium heat.
  2. Add the tofu cubes and cook until they are golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining coconut oil and sauté the green beans for 4-5 minutes until they are slightly tender.
  4. Stir in the red curry paste and cook for another minute until fragrant.
  5. Pour in the coconut milk, soy sauce, and coconut sugar. Bring to a simmer.
  6. Add the tofu back to the skillet and let everything cook together for 10-15 minutes, allowing the flavors to meld.
  7. In a separate pot, combine the rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low and let simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Serve the coconut curry tofu and green beans over the coconut rice. Enjoy!
