Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of green beans, trimmed
- 1 cup of coconut milk
- 2 tablespoons of red curry paste
- 1 tablespoon of soy sauce
- 1 tablespoon of coconut sugar
- 1 cup of jasmine rice
- 1 1/2 cups of water
- 2 tablespoons of coconut oil
- Salt and pepper to taste
Directions
- In a large skillet, heat 1 tablespoon of coconut oil over medium heat.
- Add the tofu cubes and cook until they are golden brown on all sides. Remove from the skillet and set aside.
