This Instant Pot Low Country Boil is a classic Southern dish that combines shrimp, sausage, corn, and potatoes in a flavorful seafood broth. It's a one-pot meal that is perfect for feeding a crowd or enjoying as a family dinner.

Ingredients

  • 2 lbs large shrimp, unpeeled
  • 1 lb smoked sausage, sliced
  • 4 ears of corn, cut into 3-inch pieces
  • 2 lbs baby potatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 lemon, halved
  • 2 bay leaves
  • 1/4 cup Old Bay seasoning
  • 8 cups water

Directions

  1. In your Instant Pot, combine water, Old Bay seasoning, bay leaves, garlic, and lemon halves.
  2. Add in potatoes, onion, and sausage. Close the lid and set the valve to Sealing.
  3. Set the Instant Pot to Manual/Pressure Cook for 3 minutes. Once done, do a quick release of pressure.
  4. Add in corn and shrimp to the pot. Close the lid and set the valve to Sealing again.
  5. Set the Instant Pot to Manual/Pressure Cook for 1 minute. Once done, do a quick release of pressure.
  6. Remove the lid and transfer the contents to a large serving platter or bowl.
  7. Serve the Low Country Boil hot with melted butter, cocktail sauce, and lemon wedges on the side.
