Ingredients
- 2 chicken breasts, boneless and skinless
- 8 cups chicken broth
- 2 carrots, sliced
- 1 celery stalk, sliced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 4 ounces vermicelli noodles
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- Salt and pepper to taste
- Fresh cilantro or green onions (optional), for garnish
Directions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts and cook for 15-20 minutes, or until they are fully cooked. Remove the chicken from the pot and shred it using two forks.
- In the same pot, add the carrots, celery, onion, garlic, and ginger. Cook for 5 minutes or until the vegetables are slightly tender.
- Add the vermicelli noodles to the pot and cook according to package instructions. Drain and set aside.
