Ingredients

  • 2 chicken breasts, boneless and skinless
  • 8 cups chicken broth
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • 1 onion, diced
  • 2 garlic cloves, minced

  • 4 ounces vermicelli noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)

Directions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breasts and cook for 15-20 minutes, or until they are fully cooked. Remove the chicken from the pot and shred it using two forks.
  3. In the same pot, add the carrots, celery, onion, garlic, and ginger. Cook for 5 minutes or until the vegetables are slightly tender.
  4. Add the vermicelli noodles to the pot and cook according to package instructions. Drain and set aside.
  5. Return the shredded chicken to the pot. Stir in the soy sauce and fish sauce (if using). Season with salt and pepper to taste.
  6. Serve the long soup hot, garnished with fresh cilantro or green onions if desired.
