Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 green bell peppers, diced
  • 2 cans diced tomatoes
  • 1 cup beef broth
  • 1 can green chilies, diced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Directions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add the beef stew meat to the pot and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. In the same pot, add the diced onion, minced garlic, and diced green bell peppers. Cook until the vegetables are softened and fragrant, about 5 minutes.
  4. Return the browned beef back to the pot with the vegetables.
  5. Add the diced tomatoes, beef broth, green chilies, ground cumin, chili powder, salt, and black pepper to the pot. Stir well to combine all the ingredients.
  6. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes to 1 hour, or until the beef is tender.
  7. Just before serving, stir in the chopped cilantro.
  8. Serve the beef green chili and tomato stew hot with some crusty bread or over rice.
