Creamy Chanterelle Mushrooms with Bacon

Ingredients

• 1 lb chanterelle mushrooms, cleaned and trimmed
• 6 slices bacon, chopped
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1 cup heavy cream
• 1/2 cup chicken broth
• 2 tablespoons fresh parsley, chopped
• Salt and pepper to taste

Directions

1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet, leaving the bacon fat behind.
2. Add the onion and garlic to the skillet and sauté until the onion becomes translucent and fragrant.
3. Add the chanterelle mushrooms to the skillet and cook them for about 5 minutes, or until they become tender and start to release their juices.
4. Pour in the chicken broth and bring it to a simmer. Cook for an additional 5 minutes to allow the flavors to meld together.
5. Reduce the heat to low and add the heavy cream to the skillet. Stir well to combine and let it simmer gently for 10 minutes, or until the sauce thickens slightly.
