Ingredients

  • 1 pound beef liver
  • 1 large onion, thinly sliced
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1/2 cup beef broth

Directions

  1. Slice the liver into thin pieces and pat them dry with a paper towel.
  2. In a shallow dish, mix together the flour, salt, and pepper.
  3. Dredge the liver pieces in the flour mixture, shaking off any excess.
  4. In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of vegetable oil over medium heat.
  5. Add the liver pieces to the skillet and cook for 2-3 minutes on each side, or until browned.
  6. Remove the liver from the skillet and set aside.
  7. In the same skillet, melt another 2 tablespoons of butter with 1 tablespoon of vegetable oil.
  8. Add the sliced onions to the skillet and cook for about 10 minutes, or until caramelized.
  9. Once the onions are caramelized, remove them from the skillet and set aside.
  10. Deglaze the skillet with beef broth, scraping up any browned bits from the bottom of the pan.
  11. Return the liver and onions to the skillet and cook for another 5 minutes, or until the liver is cooked through.
  12. Serve the liver and onions hot with mashed potatoes or rice.
