Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons chili powder

  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) tomato sauce
  • 1 can (14 ounces) kidney beans, drained and rinsed
  • 1 can (14 ounces) black beans, drained and rinsed
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.
  3. Add the ground beef to the pot and cook, breaking it up with a spoon, until browned and cooked through.
  4. Stir in the chili powder, cumin, paprika, oregano, and cayenne pepper (if using). Cook for an additional 1-2 minutes to toast the spices.
  5. Add the diced tomatoes, tomato sauce, kidney beans, and black beans to the pot. Stir well to combine.
  6. Bring the chili to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally.
  7. Season the chili with salt and pepper to taste. If desired, add more chili powder or cayenne pepper for extra heat.
