Ingredients

  • 1 pound smoked sausage, sliced

  • 4 green onions, sliced
  • Fresh parsley for garnish

Directions

  1. In a large pot or Dutch oven, heat some oil over medium heat.
  2. Add the smoked sausage and cook until browned. Remove from the pot and set aside.
  3. Add the chicken thighs to the pot and cook until browned. Remove from the pot and set aside.
  4. In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened.
  5. Add the diced tomatoes with their juices and cook for a few minutes.
  6. Add the rice, chicken broth, Cajun seasoning, thyme, paprika, cayenne pepper, salt, and black pepper. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  8. Stir in the cooked sausage and chicken. Cook for an additional 5 minutes to heat through.
  9. Garnish with sliced green onions and fresh parsley before serving.
