Ingredients
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1 cup diced potatoes
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 3/4 cups chicken broth
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 unbaked pie crusts
Directions
- Preheat your oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until they are softened.
- Add the flour to the skillet and stir well to combine with the melted butter. Cook for 1-2 minutes, stirring constantly.
- Gradually whisk in the chicken broth and milk. Continue cooking and stirring until the sauce thickens and comes to a boil.
- Add the cooked chicken, frozen mixed vegetables, diced potatoes, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
- Remove the skillet from the heat and set aside.
- Place one of the pie crusts in a pie dish, pressing it firmly against the bottom and sides. Spoon the chicken and vegetable mixture into the pie crust.
- Cover the filling with the second pie crust. Seal the edges and cut several slits in the top crust to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove the homemade chicken pot pie from the oven and let it cool for a few minutes before serving.
