The combination of tender chicken, vegetables, and a creamy sauce, all topped with a flaky pastry crust, makes this dish perfect for a cozy dinner. With just a little bit of preparation and a few simple ingredients, you can create a delicious and satisfying meal that your whole family will love.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 unbaked pie crusts

Directions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until they are softened.
  3. Add the flour to the skillet and stir well to combine with the melted butter. Cook for 1-2 minutes, stirring constantly.
  4. Gradually whisk in the chicken broth and milk. Continue cooking and stirring until the sauce thickens and comes to a boil.
  5. Add the cooked chicken, frozen mixed vegetables, diced potatoes, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
  6. Remove the skillet from the heat and set aside.
  7. Place one of the pie crusts in a pie dish, pressing it firmly against the bottom and sides. Spoon the chicken and vegetable mixture into the pie crust.
  8. Cover the filling with the second pie crust. Seal the edges and cut several slits in the top crust to allow steam to escape.
  9. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Remove the homemade chicken pot pie from the oven and let it cool for a few minutes before serving.
