Ingredients

  • 2 pounds ripe tomatoes
  • 1/4 cup vodka
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Directions

  1. Bring a pot of water to a boil. Score a small 'X' on the bottom of each tomato. Drop the tomatoes into the boiling water and blanch for about 30 seconds. Remove the tomatoes with a slotted spoon and transfer them to a bowl of ice water. Once cooled, peel off the skins and remove the cores. Chop the tomatoes into small pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant, about 5 minutes.
  3. Stir in the chopped tomatoes, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste. Simmer the sauce for about 20 minutes, stirring occasionally.
  4. Remove the skillet from the heat and allow the sauce to cool slightly. Using an immersion blender, blend the sauce until smooth. Alternatively, transfer the sauce to a blender and blend until smooth before returning it to the skillet.
  5. Return the skillet to low heat and stir in the vodka. Simmer for an additional 5 minutes to allow the flavors to meld together.
  6. Stir in the heavy cream and continue to simmer for another 5 minutes, until the sauce thickens slightly. Adjust seasoning if necessary.
  7. Serve the tomato vodka sauce over your favorite pasta, garnished with fresh basil leaves. Enjoy!
