- 2 pounds beef stew meat, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons tomato paste
- 4 medium potatoes, peeled and diced
- 4 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 cup frozen peas
- Salt and pepper to taste
Directions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the beef stew meat and brown it on all sides, working in batches if necessary. Remove the browned meat from the pot and set it aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
- Return the browned meat to the pot and add the beef broth, water, bay leaves, dried thyme, dried rosemary, and tomato paste. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 2 hours, stirring occasionally.
- After 2 hours, add the diced potatoes, sliced carrots, and celery to the pot. Stir to combine.
- Cover the pot again and continue to simmer for an additional 30-60 minutes, or until the vegetables are tender and the meat is cooked through.
- During the last 5 minutes of cooking, stir in the frozen peas and season with more salt and pepper if needed.
- Remove the bay leaves before serving.
