Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef stew meat and brown it on all sides, working in batches if necessary. Remove the browned meat from the pot and set it aside.
  3. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  4. Return the browned meat to the pot and add the beef broth, water, bay leaves, dried thyme, dried rosemary, and tomato paste. Season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 2 hours, stirring occasionally.
  6. After 2 hours, add the diced potatoes, sliced carrots, and celery to the pot. Stir to combine.
  7. Cover the pot again and continue to simmer for an additional 30-60 minutes, or until the vegetables are tender and the meat is cooked through.
  8. During the last 5 minutes of cooking, stir in the frozen peas and season with more salt and pepper if needed.
  9. Remove the bay leaves before serving.
