Ingredients

  • 6 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups sliced fresh strawberries
  • 2 cups whipped cream
  • Powdered sugar, for dusting

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 10x15-inch jelly roll pan with parchment paper and set aside.
  3. In a large mixing bowl, beat the eggs and sugar together until light and fluffy, approximately 5 minutes.
  4. Sift the flour, baking powder, and salt into the egg mixture. Gently fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared jelly roll pan and spread it evenly.
  6. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  7. While the cake is cooling, lay a clean kitchen towel on a flat surface and sprinkle it with powdered sugar.
  8. Once the cake has cooled slightly, carefully transfer it onto the sugared towel. Peel off the parchment paper.
  9. Starting at one of the shorter ends, roll the cake and towel together into a tight log. Allow it to cool completely.
  10. Unroll the cake and spread the whipped cream evenly over the surface.
  11. Place the sliced strawberries on top of the whipped cream.
  12. Gently roll the cake back up, removing the towel as you go.
  13. Place the strawberry roll on a serving platter, seam side down.
  14. Dust the top with powdered sugar for a decorative touch.
  15. Refrigerate for at least 2 hours before serving.
  16. Slice and serve chilled.
