Directions

  1. Place the beef chuck roast and marrow bones in a large stockpot.

  3. Pour enough cold water into the pot to cover the ingredients by 2 inches.
  4. Bring the pot-au-feu to a boil over medium heat.

  6. Reduce the heat to low and simmer, partially covered, for 2-3 hours or until the beef is tender and the flavors are well-infused.
  7. Remove the beef and vegetables from the pot and set aside.

  9. Return the broth to the pot and bring to a gentle simmer.
  10. Slice the beef into thick slices and arrange on a platter.
