  4. Return the mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon. The mixture should thicken and coat the back of the spoon, reaching a temperature of 170°F (77°C). Do not let it boil.
  5. Once thickened, remove the saucepan from the heat and strain the creme anglaise through a fine-mesh sieve into a clean bowl.
  6. If using a vanilla bean, scrape the seeds into the strained sauce. If using vanilla extract, stir it in.
