Ingredients

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound fresh spinach, washed and chopped
  • 15 ounces ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent.
  4. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally.
  5. In a medium bowl, combine the ricotta cheese, egg, 1 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese. Mix well.
  6. Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish.
  7. Place 3 lasagna noodles on top of the sauce.
  8. Spread half of the ricotta cheese mixture evenly over the noodles.
  9. Spread half of the spinach mixture evenly over the cheese.
  10. Sprinkle half of the dried oregano, salt, and pepper over the spinach layer.
  11. Repeat the layers starting with the marinara sauce, lasagna noodles, ricotta cheese mixture, spinach mixture, and seasonings.
  12. Top with the remaining 3 lasagna noodles and spread marinara sauce over the top.
  13. Sprinkle the remaining mozzarella and Parmesan cheeses over the sauce.
  14. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  15. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
