This classic chicken pot pie recipe is a comforting and delicious dish that the whole family will love. Made with tender chunks of chicken, mixed vegetables, and a flaky homemade crust, this pot pie is the ultimate comfort food. It's easy to make and perfect for any occasion.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3 tablespoons ice water
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups cooked chicken, diced
  • 1 cup frozen peas
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Directions

  1. In a large mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  2. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  5. Sprinkle the flour over the vegetables and stir well to coat. Gradually pour in the chicken broth and milk, stirring constantly. Allow the mixture to simmer until thickened, about 5 minutes.
  6. Stir in the cooked chicken, frozen peas, dried thyme, dried rosemary, salt, and pepper. Remove the skillet from the heat and set aside.
  7. On a lightly floured surface, roll out the chilled dough into a circle large enough to cover your pie dish. Transfer the rolled-out dough to the pie dish, pressing it against the sides.
  8. Pour the chicken and vegetable filling into the prepared pie dish.
  9. Roll out the remaining dough and cut it into strips or shapes of your choice. Arrange the dough strips or shapes over the filling in a lattice pattern or simply place them on top. Press the edges of the dough together to seal.
  10. Brush the beaten egg over the dough for a golden and shiny crust.
  11. Bake the chicken pot pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Remove the pot pie from the oven and allow it to cool for a few minutes before serving. Enjoy!
