- 1 cup all-purpose flour
- 1 1/2 cups milk

- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract

- In a blender or mixing bowl, combine the flour, milk, eggs, melted butter, and salt. Blend or whisk until smooth and no lumps remain. Let the batter rest for 10 minutes.
- While the batter is resting, prepare the cheese filling. In a separate bowl, mix together the cottage cheese, sugar, vanilla extract, and egg until well combined.
- Heat a non-stick skillet or crepe pan over medium heat. Brush the pan with a small amount of butter to prevent sticking.
- Pour about 1/4 cup of the batter into the hot pan, swirling it around to evenly coat the bottom. Cook for about 1 minute or until the edges start to lightly brown. Flip the crepe and cook for an additional 30 seconds. Transfer the cooked crepe to a plate and repeat with the remaining batter.
