Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup orange juice
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup cranberry sauce
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 1 tablespoon brown sugar

Directions

  1. In a shallow bowl, combine the orange juice, lemon juice, garlic, thyme, salt, and pepper. Place the chicken in the marinade and refrigerate for at least 30 minutes.
  2. Preheat oven to 350°F.
  3. In a small saucepan, combine the cranberry sauce, honey, butter, and brown sugar. Cook over medium heat until the mixture is bubbly and thickened, about 5 minutes.
  4. Place the chicken in a 9-inch baking dish and pour the sauce over the chicken. Bake for 30 minutes or until chicken is cooked through.
  5. Serve with a side of mashed potatoes or roasted vegetables.
