- 1 cup spelt flour
- 1/2 cup rolled oats
- 3/4 cup raisins
- 1/2 teaspoon baking soda

- 1 teaspoon pure vanilla extract
Directions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the spelt flour, rolled oats, raisins, baking soda, ground cinnamon, and salt.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, and pure vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Scoop the cookie dough onto the prepared baking sheet, about 2 tablespoons per cookie.
- Bake for 12-15 minutes, until the edges are golden brown and the centers are set.
- Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
