1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup melted coconut oil
1/3 cup maple syrup
1 teaspoon pure vanilla extract
Directions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, mix together the spelt flour, rolled oats, raisins, baking soda, ground cinnamon, and salt.
In a separate bowl, whisk together the melted coconut oil, maple syrup, and pure vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until combined.
Scoop the cookie dough onto the prepared baking sheet, about 2 tablespoons per cookie.
Bake for 12-15 minutes, until the edges are golden brown and the centers are set.
