Ingredients
- 1 cup crispy rice cereal
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups vanilla ice cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine the crispy rice cereal, butter, brown sugar, vanilla extract, and salt. Mix until everything is evenly combined.
- Press the mixture into the bottom of an 8x8 inch baking pan. Bake for 10 minutes, or until golden brown.
- Allow the crust to cool completely before adding the ice cream. Spread the ice cream over the cooled crust and place in the freezer for at least 2 hours.
- In a small saucepan, melt the chocolate chips and heavy cream over low heat, stirring constantly. Once the mixture is melted and smooth, pour it over the ice cream.
- Return the pan to the freezer for another 2 hours, or until the chocolate has set.
- Cut into bars and enjoy!
