Ingredients
- 1 large watermelon
- 1 cup granulated sugar
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup water
Directions
- Cut the watermelon in half and scoop out the flesh, leaving the rind intact.
- Using a sharp knife, carefully trim off the green skin from the rind and discard.
- Cut the rind into small cubes.
- In a medium saucepan, combine the sugar, ginger, cinnamon, nutmeg, cloves, and water. Stir together and bring to a simmer.
- Add the cubed watermelon rind and reduce the heat to low. Simmer for 30 minutes, stirring occasionally.
- Remove from heat and let cool completely.
- Once cooled, the watermelon rind candy is ready to be served.
