Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • 2 teaspoons vanilla extract
  • 3 tablespoons ground cinnamon
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Directions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Divide the dough in half. Wrap each half in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

  8. Remove one portion of dough from the refrigerator. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  9. Spread half of the melted butter evenly over the rolled out dough. Sprinkle half of the cinnamon sugar mixture over the butter.
  10. Starting from one edge, tightly roll up the dough into a log shape. Use a sharp knife to slice the log into cookies, about 1/2 inch thick. Place the cookies onto the prepared baking sheets.
  11. Repeat the process with the remaining dough, melted butter, and cinnamon sugar mixture.
  12. Bake the cookies for 10-12 minutes, or until the edges are lightly golden brown.
  13. While the cookies are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
