Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 tablespoons ground cinnamon
- 1/2 cup packed light brown sugar
- 1/4 cup unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough in half. Wrap each half in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a small bowl, combine the ground cinnamon and light brown sugar. Set aside.
- Remove one portion of dough from the refrigerator. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Spread half of the melted butter evenly over the rolled out dough. Sprinkle half of the cinnamon sugar mixture over the butter.
- Starting from one edge, tightly roll up the dough into a log shape. Use a sharp knife to slice the log into cookies, about 1/2 inch thick. Place the cookies onto the prepared baking sheets.
- Repeat the process with the remaining dough, melted butter, and cinnamon sugar mixture.
- Bake the cookies for 10-12 minutes, or until the edges are lightly golden brown.
- While the cookies are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
