Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • Powdered sugar, for dusting

Directions

  1. Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter or cooking spray and dust with flour. Set aside.
  2. In a mixing bowl, whisk together flour, baking powder, salt, and ground cinnamon. Set aside.
  3. In a separate large mixing bowl, beat together melted butter and granulated sugar until well combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Spoon the batter into the prepared madeleine pan, filling each mold almost to the top.
  7. Bake in the preheated oven for 10-12 minutes, or until the madeleines are golden brown on the edges and spring back when lightly touched.
  8. Remove from the oven and let cool in the pan for a few minutes. Gently transfer the madeleines onto a wire rack to cool completely.
  9. Dust with powdered sugar before serving. Enjoy these delicious cinnamon madeleines with a cup of tea or coffee!
