Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup butter
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan.
  2. Melt chocolate chips and butter in the top of a double boiler. Stir until smooth.
  3. In a large bowl, beat eggs, sugar, and vanilla until light and fluffy. Add the melted chocolate mixture and mix until combined.
  4. In a small bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the chocolate mixture and mix until just blended.
  5. Pour into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool. Once cool, cut cake into two even layers.
  7. In a medium bowl, beat cream until soft peaks form. Gradually add confectioners' sugar and beat until stiff peaks form.
  8. Spread half of the whipped cream over the bottom layer and top with the other layer of cake.
  9. Spread remaining whipped cream over the top and sides of the cake.
  10. Refrigerate for at least 2 hours before serving.
