Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder
  • 1/2 cup milk
  • 1/2 cup crushed Oreos
  • 1/2 cup cream cheese
  • 1/2 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a large bowl, cream together butter and sugar with an electric mixer until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
  4. Combine flour, baking powder, baking soda, salt, and cocoa powder. Add to creamed mixture alternately with milk, beating well after each addition.
  5. Stir in crushed Oreos.
  6. Fill cupcake liners about two-thirds full with batter and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool completely before frosting.
  8. In a large bowl, cream together cream cheese and butter with an electric mixer until light and fluffy.
  9. Add powdered sugar, milk, and vanilla extract. Beat until smooth and creamy.
  10. Frost cooled cupcakes with cream cheese frosting and top with crushed Oreos, if desired.
