Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 3 cups broccoli florets
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1 cup shredded Gouda cheese

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook for 4 minutes, until the onion is softened.
  2. Add the vegetable broth, broccoli, oregano, pepper, and salt. Bring to a simmer, and cook for 10 minutes, until the broccoli is tender.
  3. Stir in the heavy cream and Gouda cheese. Simmer for 2 minutes, until the cheese is melted.
  4. Puree the soup using an immersion blender until it is smooth. Serve hot.
