Ingredients
1 cup dried lentils
1/2 cup chopped cactus
1 onion, diced
2 cloves garlic, minced
1/2 teaspoon cumin

Directions

Reduce heat to low, cover, and simmer for 20 minutes or until lentils are tender.
Add tomato and cilantro and cook for an additional 5 minutes.
Serve warm with a topping of fresh cilantro.
