Ingredients

  • 1 cup dried lentils
  • 1/2 cup chopped cactus
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 large tomato, diced
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes.
  2. Add lentils, cactus, cumin, chili powder, paprika, salt, and pepper. Stir to combine.
  3. Pour in vegetable broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until lentils are tender.
  5. Add tomato and cilantro and cook for an additional 5 minutes.
  6. Serve warm with a topping of fresh cilantro.
