Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 4 roasted hatch chilies, diced
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can black beans, drained and rinsed
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • Sour cream, for garnish
  • Shredded cheddar cheese, for garnish

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the ground beef and cook, stirring occasionally, until browned, about 5 minutes.
  3. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 3 minutes.
  4. Add the cumin, chili powder, paprika, coriander, cayenne pepper, and salt and stir to combine.
  5. Add the hatch chilies, tomatoes, black beans, and chicken broth and bring to a simmer.
  6. Reduce the heat to low and simmer, stirring occasionally, for 45 minutes.
  7. Stir in the lime juice and cilantro and season to taste with salt and pepper.
  8. Serve with sour cream and shredded cheddar cheese, if desired.
