2 tablespoons olive oil
1 pound ground beef
1 cup diced onion
2 cloves garlic, minced

Directions
Heat the olive oil in a large pot over medium-high heat.
Add the ground beef and cook, stirring occasionally, until browned, about 5 minutes.
Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 3 minutes.
Add the cumin, chili powder, paprika, coriander, cayenne pepper, and salt and stir to combine.
Add the hatch chilies, tomatoes, black beans, and chicken broth and bring to a simmer.
Reduce the heat to low and simmer, stirring occasionally, for 45 minutes.
Stir in the lime juice and cilantro and season to taste with salt and pepper.
Serve with sour cream and shredded cheddar cheese, if desired.
