Ingredients

  • 2 cups cooked quinoa
  • 2 tablespoons sesame oil

  • 1/2 cup shredded carrots
  • 1/2 cup chopped scallions
  • 1/2 cup shelled edamame
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Directions

  1. In a large bowl, combine the quinoa, sesame oil, soy sauce, rice vinegar, garlic, and ginger. Stir until well combined.
  2. Add the carrots, scallions, edamame, cilantro, and peanuts. Stir until everything is evenly distributed.
