Ingredients
- 2 peaches, diced
- 1 jalapeno pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, diced
- 1/2 teaspoon chipotle pepper, finely chopped

- salt and pepper to taste
Directions
- In a medium bowl, combine the diced peaches, jalapeno pepper, cilantro, red onion, and chipotle pepper.
- Add the lime juice, olive oil, salt, and pepper. Stir until all ingredients are combined.
- Let the salsa sit for at least 10 minutes to allow the flavors to blend together.
- Serve with tortilla chips or as a topping for tacos, burritos, or enchiladas.
