Ingredients
- 1 lb. boneless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 2 eggs, lightly beaten
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1/4 cup lemon juice
- 1/4 cup sugar
- 2 Tbsp. ketchup
- 2 Tbsp. soy sauce
- 1 tsp. minced garlic
- 1/4 tsp. ground ginger
- 2 tsp. cornstarch mixed with 2 Tbsp. cold water
Directions
- In a shallow bowl, combine the flour, salt, and pepper. Add the chicken pieces, stirring to coat. In another shallow bowl, beat the eggs.
- In a separate shallow bowl, place the cornstarch. Dip each piece of chicken in the egg, then in the cornstarch to coat.
- In a large skillet over medium-high heat, heat the vegetable oil. Add the chicken and cook for 5 minutes, stirring occasionally, until golden and crispy.
- In a small bowl, combine the lemon juice, sugar, ketchup, soy sauce, garlic, and ginger. Pour the mixture over the chicken and stir to coat. Simmer for 5 minutes.
- Stir in the cornstarch mixture and cook for another 2 minutes until the sauce is thickened. Serve over white rice.
