Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced almonds
  • 2 green onions, chopped
  • Cooked rice, for serving

Directions

  1. In a medium bowl, combine the sliced chicken breasts, soy sauce, and cornstarch. Toss to evenly coat the chicken. Set aside.
  2. In a small bowl, whisk together the chicken broth, oyster sauce, hoisin sauce, and sesame oil. Set aside.
  3. Heat a large wok or skillet over high heat. Add a tablespoon of oil and swirl to coat the pan.
  4. Add the minced garlic and grated ginger to the hot pan, stirring constantly for about 30 seconds or until fragrant.
  5. Add the marinated chicken to the pan and stir-fry for 3-4 minutes, or until cooked through. Remove the chicken from the pan and set aside.
  6. Add another tablespoon of oil to the pan and add the sliced onion, red bell pepper, snow peas, and mushrooms. Stir-fry for 2-3 minutes, or until vegetables are crisp-tender.
  7. Return the chicken to the pan and pour the sauce mixture over the top. Stir-fry for an additional 1-2 minutes, or until the sauce has thickened.
  8. Sprinkle the sliced almonds and chopped green onions over the top of the stir fry.
