Ingredients

  • 3 lbs. beef chuck roast, cut into 1-inch cubes
  • 2 lbs. pork shoulder, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz.) diced tomatoes
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) kidney beans, drained and rinsed
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1/2 cup beer
  • Optional Toppings: sour cream, shredded cheese, diced onions, sliced jalapenos

Directions

  1. In a large pot over medium-high heat, add the beef and pork cubes. Cook for 8-10 minutes, stirring occasionally until the beef and pork are lightly browned.
  2. Add the vegetable oil, onions, and garlic. Cook for 5 minutes or until the onions are softened.
  3. Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute, stirring constantly.
  4. Add the diced tomatoes, tomato sauce, kidney beans, black beans, and beer. Stir to combine.
  5. Bring the mixture to a simmer and reduce the heat to low. Cover the pot and let the chili simmer for 30 minutes, stirring occasionally.
  6. Remove the lid and let the chili simmer for an additional 15 minutes, stirring often.
  7. Serve the chili with your favorite toppings and enjoy!
