Ingredients
- 3 lbs. beef chuck roast, cut into 1-inch cubes
- 2 lbs. pork shoulder, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 2 large onions, diced
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 oz.) diced tomatoes
- 1 can (15 oz.) tomato sauce
- 1 can (15 oz.) kidney beans, drained and rinsed
- 1 can (15 oz.) black beans, drained and rinsed
- 1/2 cup beer
- Optional Toppings: sour cream, shredded cheese, diced onions, sliced jalapenos
Directions
- In a large pot over medium-high heat, add the beef and pork cubes. Cook for 8-10 minutes, stirring occasionally until the beef and pork are lightly browned.
- Add the vegetable oil, onions, and garlic. Cook for 5 minutes or until the onions are softened.
- Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute, stirring constantly.
- Add the diced tomatoes, tomato sauce, kidney beans, black beans, and beer. Stir to combine.
- Bring the mixture to a simmer and reduce the heat to low. Cover the pot and let the chili simmer for 30 minutes, stirring occasionally.
- Remove the lid and let the chili simmer for an additional 15 minutes, stirring often.
- Serve the chili with your favorite toppings and enjoy!
