Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne powder (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can black beans, rinsed and drained
- 1 (4 oz) can green chiles, diced
- 1 cup chicken broth
- 1 pound boneless, skinless chicken breasts, diced
- 1/4 cup fresh cilantro, chopped
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic and bell pepper and cook until vegetables are softened, about 5 minutes.
- Add the chili powder, cumin, smoked paprika, cayenne powder (if using), salt and black pepper and stir to combine. Cook for 1 minute.
- Add the diced tomatoes, black beans, green chiles, and chicken broth. Stir to combine and bring to a simmer.
- Add the chicken and cook until chicken is cooked through, about 10 minutes.
- Stir in the fresh cilantro and serve.
