Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked, shredded chicken
  • 1 (4.5 ounce) can diced green chiles
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1/2 cup chopped cilantro
  • 1/2 cup shredded cheese
  • 1/2 cup prepared salsa
  • 1 (9-inch) unbaked pie crust

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Stir in cumin, chili powder, salt, and pepper; cook and stir for 1 minute.
  3. Stir in chicken, green chiles, tomatoes, cilantro, cheese, and salsa. Cook and stir until heated through. Remove from heat.
  4. Roll out pie crust and place in a 9-inch pie plate. Pour chicken mixture into crust.
  5. Bake in preheated oven for 30 minutes, or until crust is golden brown.
