Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 green bell pepper, diced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups half-and-half cream
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 bay leaf
  • 2 (6 ounce) cans tuna, drained
  • 2 tablespoons chopped fresh parsley

Directions

  1. Melt the butter in a large pot over medium heat. Add onion, garlic, celery, and bell pepper; cook and stir until vegetables are softened, about 5 minutes.
  2. Stir in the flour until vegetables are evenly coated. Pour in the chicken broth and half-and-half cream; stir until the mixture is smooth. Add tomatoes, thyme, oregano, pepper, and bay leaf. Simmer for 20 minutes.
  3. Stir in the tuna and parsley, and simmer for 5 minutes more. Remove the bay leaf before serving.
