- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 1 green bell pepper, diced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups half-and-half cream
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1 bay leaf
- 2 (6 ounce) cans tuna, drained
- 2 tablespoons chopped fresh parsley
Directions
- Melt the butter in a large pot over medium heat. Add onion, garlic, celery, and bell pepper; cook and stir until vegetables are softened, about 5 minutes.
- Stir in the flour until vegetables are evenly coated. Pour in the chicken broth and half-and-half cream; stir until the mixture is smooth. Add tomatoes, thyme, oregano, pepper, and bay leaf. Simmer for 20 minutes.
- Stir in the tuna and parsley, and simmer for 5 minutes more. Remove the bay leaf before serving.
