Ingredients

  • 1 pound ground chicken
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained and rinsed
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup water
  • Optional toppings: shredded cheese, sour cream, diced avocado, diced onion, chopped cilantro

Directions

  1. Heat a large skillet over medium-high heat. Add the ground chicken and cook until browned, about 8 minutes. Add the onion and garlic and cook for an additional 3 minutes.
  2. Add the chili powder, cumin, oregano, salt, and pepper and stir to combine. Cook for an additional 1 minute.
  3. Add the cooked ground chicken mixture to the slow cooker. Add the diced tomatoes, black beans, corn, tomato sauce, and water. Stir to combine.
  4. Cover and cook on low for 4 hours.
  5. Serve with desired toppings.
