Ingredients

  • 1 (3-4 lb) beef roast
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups beef broth

Directions

  1. Preheat oven to 350°F/175°C.
  2. Heat the olive oil in a large oven-safe pot over medium-high heat. Add the beef roast and brown on all sides, about 8 minutes total.
  3. Add the onion, garlic, rosemary, thyme, salt, and pepper to the pot and cook, stirring, until fragrant, about 2 minutes.
  4. Pour the beef broth into the pot and bring to a simmer. Cover the pot with a lid and transfer to the preheated oven.
  5. Roast the beef for 2 hours, or until the internal temperature reaches 140°F/60°C.
  6. Remove the roast from the oven and let rest for 10 minutes before slicing and serving.
