Ingredients

  • 1 butternut squash, peeled, seeded and cut into cubes
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the butternut squash, onion, olive oil, and salt. Toss to coat.
  3. Spread the mixture in a single layer on a baking sheet. Roast for 15 minutes, or until the squash is tender and browned.
  4. Remove from the oven and let cool.
  5. In a medium bowl, combine the roasted squash, feta cheese, balsamic vinegar, and black pepper. Toss to combine.
  6. Transfer the salad to a serving bowl and garnish with parsley.
