Ingredients
- 4 boneless, skinless chicken breasts, cut into cubes
- 1/4 cup olive oil
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1 (14.5 ounce) can diced tomatoes, with juice
- 1/4 cup chopped fresh basil
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, stir together the olive oil, Parmesan cheese, parsley, garlic, salt, pepper, oregano, and red pepper flakes.
- Add the chicken cubes, and toss to coat.
- Transfer the chicken to a 9x13 inch baking dish.
- Bake in preheated oven for 25 minutes.
- Meanwhile, in a medium saucepan over medium heat, combine the tomatoes and their juice with the basil. Simmer for 10 minutes.
- Remove the chicken from the oven, and pour the tomato sauce over it. Return to the oven, and bake 15 minutes more.
- Serve hot.
