Ingredients
- 4 large potatoes
- 1/2 cup shredded cheddar cheese
- 2 cups cooked, shredded chicken
- 1/2 cup cooked bacon, crumbled
- 1/2 cup ranch dressing
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Directions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Scrub the potatoes and prick each one several times with a fork. Bake for 45 minutes, or until the potatoes are tender when pierced with a fork.
- Once the potatoes have cooled, cut each one in half lengthwise and scoop out the centers, leaving a 1/4-inch thick shell.
- In a large bowl, combine the scooped out potato, cheese, chicken, bacon, ranch dressing, parsley, salt, and pepper. Mix until combined.
- Divide the potato mixture evenly among the potato shells and place on the prepared baking sheet.
- Bake for 15 minutes, or until the potatoes are golden and the filling is heated through.
- Garnish with parsley and serve.
