Ingredients

  • 1 cup chopped dates
  • 1 cup hot water
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch loaf pan with butter.
  2. In a medium bowl, combine the dates and hot water. Let stand for 10 minutes.
  3. In a large bowl, cream together the butter and sugar until fluffy. Add the baking soda, salt, and vanilla and mix until combined.
  4. Add the cocoa powder and mix until combined. Gradually add the flour, stirring until just combined.
  5. Add the date mixture and walnuts and stir until just combined.
  6. Pour batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool before slicing and serving.
