Ingredients
1 tablespoon olive oil
1/2 onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon paprika
1/4 teaspoon ground cloves
1-14 ounce can black beans, drained and rinsed
1-14 ounce can diced tomatoes
1 cup cooked white rice
Salt and pepper to taste
1/3 cup chopped cilantro
1 avocado, sliced
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion, bell pepper, and garlic and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
Add the cumin, chili powder, oregano, paprika, and cloves and stir to combine. Cook for 1 minute.
Add the beans, tomatoes, and cooked rice and stir to combine. Season with salt and pepper to taste.
Cook for 3-4 minutes, stirring occasionally, until the rice is heated through.
Stir in the cilantro and remove from heat.
Serve with avocado slices.
