Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cloves
  • 1-14 ounce can black beans, drained and rinsed
  • 1-14 ounce can diced tomatoes
  • 1 cup cooked white rice
  • Salt and pepper to taste
  • 1/3 cup chopped cilantro
  • 1 avocado, sliced

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, bell pepper, and garlic and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
  3. Add the cumin, chili powder, oregano, paprika, and cloves and stir to combine. Cook for 1 minute.
  4. Add the beans, tomatoes, and cooked rice and stir to combine. Season with salt and pepper to taste.
  5. Cook for 3-4 minutes, stirring occasionally, until the rice is heated through.
  6. Stir in the cilantro and remove from heat.
  7. Serve with avocado slices.
