Ingredients
1 lb. boneless, skinless chicken breast, cut into cubes
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup balsamic vinegar
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1/4 cup sun-dried tomatoes, chopped
3 cups fresh baby spinach
1/2 cup orzo pasta, cooked
1/4 cup crumbled feta cheese
Directions
In a large skillet, heat the olive oil over medium heat. Add the chicken cubes and cook for 5 minutes, stirring occasionally.
Add the garlic, Italian seasoning, salt and pepper. Cook for an additional 3 minutes, stirring occasionally.
Add the balsamic vinegar, chicken broth and lemon juice. Simmer for 5 minutes.
Add the sun-dried tomatoes and spinach, cover and cook for 3 minutes.
Remove from heat and stir in the cooked orzo pasta and feta cheese. Serve warm.
