Chicken Florentine Salad with Orzo Pasta

Ingredients

  • 1 lb. boneless, skinless chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup balsamic vinegar
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cups fresh baby spinach
  • 1/2 cup orzo pasta, cooked
  • 1/4 cup crumbled feta cheese

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken cubes and cook for 5 minutes, stirring occasionally.
  2. Add the garlic, Italian seasoning, salt and pepper. Cook for an additional 3 minutes, stirring occasionally.
  3. Add the balsamic vinegar, chicken broth and lemon juice. Simmer for 5 minutes.
  4. Add the sun-dried tomatoes and spinach, cover and cook for 3 minutes.
  5. Remove from heat and stir in the cooked orzo pasta and feta cheese. Serve warm.
