Ingredients
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 pound chicken breasts, cut into 1-inch cubes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup white wine
2 cups broccoli florets
1 (10 oz.) package frozen riced cauliflower

Directions
Preheat oven to 375°F. Grease a 9x13-inch baking dish with cooking spray.
Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
Add chicken, Italian seasoning, salt, and pepper and cook until chicken is no longer pink, about 5 minutes.
Add white wine and cook until almost evaporated, about 1-2 minutes.
Add broccoli and cook until bright green, about 2 minutes.
Add riced cauliflower and stir to combine. Cook until heated through, about 5 minutes.
Transfer mixture to prepared baking dish. Sprinkle Parmesan cheese over top.
Bake for 25 minutes, or until cheese is melted and bubbly.
