Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breasts, cut into 1-inch cubes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup white wine
  • 2 cups broccoli florets
  • 1 (10 oz.) package frozen riced cauliflower
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish with cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
  3. Add chicken, Italian seasoning, salt, and pepper and cook until chicken is no longer pink, about 5 minutes.
  4. Add white wine and cook until almost evaporated, about 1-2 minutes.
  5. Add broccoli and cook until bright green, about 2 minutes.
  6. Add riced cauliflower and stir to combine. Cook until heated through, about 5 minutes.
  7. Transfer mixture to prepared baking dish. Sprinkle Parmesan cheese over top.
  8. Bake for 25 minutes, or until cheese is melted and bubbly.
