Ingredients

  • 1 head of butter lettuce
  • 1/2 cup black olives
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup green onion, diced
  • 2 hard-boiled eggs, sliced
  • 1/4 cup radishes, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the lettuce, olives, tomatoes, red onion, green onion, eggs, radishes, parsley, and feta cheese.
  2. In a separate bowl, whisk together the olive oil, lemon juice, dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Serve the salad immediately.
