Ingredients

  • 2 pounds potatoes, peeled and cut into 2-inch chunks
  • 1/4 cup mascarpone cheese
  • 1/4 cup half-and-half
  • 2 tablespoons butter
  • salt and pepper to taste

Directions

  1. Place potatoes in a large pot and cover with cold water.
  2. Bring to a boil over high heat and cook for about 15 minutes, or until potatoes are tender.
  3. Drain potatoes and return them to the pot.
  4. Add the mascarpone cheese, half-and-half, and butter and mash until desired consistency is reached.
  5. Season with salt and pepper to taste.
  6. Serve warm.
