1 pound boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce
2 tablespoons rice vinegar
1/4 teaspoon ground ginger
4 large flour tortillas
1/2 cup shredded carrots
1/2 cup shredded red cabbage
Directions
Heat olive oil in a large skillet over medium heat. Add chicken strips and garlic and cook, stirring occasionally, for 7-8 minutes, or until chicken is cooked through.
In a small bowl, whisk together honey, soy sauce, rice vinegar, and ground ginger.
Add honey mixture to the chicken and cook for an additional 2-3 minutes, stirring often.
Place a large flour tortilla on a plate and top with chicken and vegetables. Roll up tightly and cut in half.
Serve warm.
