Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon ground ginger
  • 4 large flour tortillas
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage

Directions

  1. Heat olive oil in a large skillet over medium heat. Add chicken strips and garlic and cook, stirring occasionally, for 7-8 minutes, or until chicken is cooked through.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, and ground ginger.
  3. Add honey mixture to the chicken and cook for an additional 2-3 minutes, stirring often.
  4. Place a large flour tortilla on a plate and top with chicken and vegetables. Roll up tightly and cut in half.
  5. Serve warm.
