  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

  • 1/4 cup finely chopped cilantro, plus more for garnish

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  6. Add the onion and garlic and cook until softened, about 5 minutes.
  7. Add the cumin, coriander, garam masala, turmeric, chili powder, salt, and pepper and cook for an additional minute.
  8. Add the diced tomatoes and cook for an additional 5 minutes.
  9. Add the eggplant and cook for an additional 5 minutes, stirring occasionally.
  10. Stir in the cilantro and cook for an additional 2 minutes.
